Professional web statistics tools, which is the best?

I'm looking to find a professional web metrics tool. I mean one that I install, that can look directly in my server logs, that I pay for, that is frequently updated so to not take bots etc. into account and one that serves data in all possible ways.
I don't mean google analytics or awstats or the likes. I mean, a tool that big sites/big companies use simply because it's the best.

Thanks, orionb, that's a nice overall evaluation.
Just to sum up, it mentions 4 products that might be what i'm searching for:
- ClickTracks (www.clicktracks.com)
- WebTrends (www.webtrends.com)
- WebSideStory HBX Analytics (www.websidestory.com)
- Omniture's SiteCatalyst (www.omniture.com)
I'll take a look and see which I decide to go with.
