There a several web-based applications that can help you with this. All of them use the same trick. You include an images in the e-mail and track how many times it gets downloaded from the server. Advanced applications create individual images and will be able to tell you exactly witch e-mails have been opened. Most of these applications don't come cheap, so if money is an issue you will have to be creative yourself. Currently I'm using Clang for my mailings.

I never used it but, Mailchimp seams to be a popular monkey.

You can use a marketing automation tool as well. These give you additional options, too, like managing email campaigns, tracking site visitors and gathering sales intelligence, conversion optimization, etc.
You could try out Marketo or Pardot or Deskgod, they all have useful features.
